Paleo Banana Bread (GF/DF)

Gluten Free! Dairy Free! Paleo! Can it be???… (the answer is ohhhh YES).

It’s the comeback queen!!! Yes, I’m talking about banana bread.

But this isn’t your mom’s banana bread, this is the new and improved healthy, snatched version.

This recipe has:

-       No Gluten

-       No Dairy

-       No Refined Sugar

I couldn’t believe it when I tried it, but this loaf is gooooood and easy AF to make!

And here it is!

 

Ingredients:

3 large overripe bananas (about 1 heaping cup - mashed)

1/4 cup melted coconut oil (or grass-fed butter if you can handle dairy)

1/4 cup almond butter

1 tbsp of pure maple syrup

1 tsp vanilla extract

3 large eggs (room temperature)

1/2 cup of coconut flour

1/2 cup superfine almond flour

1/2 tsp baking powder

1 tsp baking soda

1/2 tsp sea salt

1/2 tsp cinnamon

1/2 cup vegan chocolate chips ( I like to use the brand Enjoy Life)

1/2 cup of walnuts

 

Instructions:

-       Preheat oven to 350 degrees F

-       In a small bowl combine dry ingredients: coconut flour, almond flour, baking powder, baking soda, salt and cinnamon

-       In a separate bigger bowl, mix together melted coconut oil and almond butter

-       Add mashed bananas, vanilla, and maple syrup to the wet mix

-       Add eggs and whip wet mixture until smooth

-       Add dry ingredients into the wet ingredients bowl and stir until combined

-       Gently mix in chocolate chips and walnuts

-       Pour batter into bread pan and bake for 60-65 minutes, until top is crunchy and a toothpick inserted in the center comes out clean

-       Let cool in the pan for 5 minutes before removing, set on wire rack to cool
