The BEST Healthy Chocolate Chip Cookies (GF/DF)

If you are like me, you have probably tried 1289369126 different gluten free recipes for chocolate chip cookies and utterly failed in the “taste department”.

You think that’s a made up number? Guess again.

But I’m here to tell you your worries are ALL OVER, as I have found a way to trick even the cleverest of cookie connoisseurs (aka all the boyfriends who all think gluten free = free of taste).

There is a method to this madness, so when recreating these babies, make sure to follow allllll the rules. That means, in order and everything. Ok sugar?

Now first things first, the pro tips:

  • preheat oven to 375 F degrees & do not stick the cookie tray in there until it has fully heated (no preheated trays!)

  • cream together butter and sugar separately from everything else first, make sure its fluffy

  • test the efficacy of both your baking soda and baking powder (if it bubbles vigorously, you’re good to go!):

    • baking soda - mix 1/2 tsp with hot water + vinegar/ or lemon juice

    • baking powder - mix 1/2 tsp with 1/4 cup hot water

  • when measuring the dry ingredients (like flour), spoon small amounts into the measuring cup and DO NOT PACK or dunk the cup into the bag of flour; level it off with the spoon handle or a straight knife

  • pour the dry INTO THE WET; stir together with a cake spatula

  • for salt, only use REAL sea salt or Himalayan pink salt (regular table salt will not work)

  • after the dough is made, stick it in the fridge for 20 minutes before baking… no arguing

  • when you take the cookies out, they will not look done but just trust me on this one!

Now for the actual recipe.

Follow this in order and you shall have gluten free (dairy free if you want to go crazy) gooey AF cookies in no time that will impress your friends far and wide.

Ingredients:

  • 3 cups of gluten free four

  • 1 cup melted coconut oil (or grass-fed butter if you can handle dairy)

  • 1 cup dark brown sugar packed

  • 1 cup coconut sugar

  • 2 large pasture-raised eggs

  • 2 tsp pure vanilla extract

  • 1 tsp baking soda

  • ½ tsp baking powder

  • 1 tsp real sea salt (cut that in half if you don’t have the real thing)

  • 1 cup of vegan chocolate chip chunks (I like to use the brand Enjoy Life)

Instructions:

  • Mix together flour, salt, baking soda, and baking powder

  • Cream together melted butter and sugar

  • Mix all wet ingredients together & whisk until fluffy

  • Pour the dry ingredients into the wet mix

  • Fold in chocolate chips

  • Chill dough for 20 minutes in fridge

  • Roll into 2-3 tbsp balls & evenly space out on parchment paper

  • Bake in oven for 8-9 minutes until they are lightly browning on edges

  • Let them sit on the baking sheet for 2 minutes before transferring to cooling rack
